Roasted Sweet Potatoes with Bleu Cheese & Honey

  • 2 lbs sweet potatoes, peeled and large diced
  • 2 tbsp vegetable oil
  • Salt, to taste
  • 3 tbsp Olde Thompson Smoked Onion & Garlic Pasta Mix-Ins Seasoning (divided)
  • Honey, to taste
  • Crumbled Bleu cheese, for garnish

  1. Preheat oven to 375°F.
  2. In a bowl, toss the diced sweet potatoes with vegetable oil and salt.
  3. Spread the potatoes over a rack set on a sheet tray in a single layer.
  4. Roast for 12-15 minutes, or until tender and slightly crisped.
  5. Once out of the oven, toss with 2 tbsp of the Olde Thompson Smoked Onion & Garlic Pasta Mix-Ins Seasoning.
  6. Plate in a serving bowl and top with an additional tablespoon of the seasoning.
  7. Drizzle honey to taste and finish with crumbled Bleu cheese.
