Garlicky Twice-Baked Potatoes

  • 2 Russet potatoes
  • 2 teaspoons Olde Thompson Garlic Butter Seasoning
  • 2 Tablespoons unsalted butter
  • 2 Tablespoons sour cream
  • 2 Tablespoons milk
  • 2 oz mild shredded cheese, such as mild cheddar, Colby or CoJack

  1. Preheat oven to 350ºF. Pierce potatoes all over with a fork or paring knife and place in oven. Bake until soft and cooked through, about 1 hour.
  2. Remove potatoes from oven and slice in half lengthwise. Scoop out center of each potato half into a medium bowl, leaving about ¼ inch of potato around the inside of each potato skin. Place each skin on a baking sheet, skin side down.
  3. Mash cooked potato with Garlic Butter Seasoning, butter, sour cream and milk until completely blended. Divide mixture evenly among potato skins and top each with equal amounts of cheese. Return to oven and bake until cheese is melted, 10-15 minutes.
