SEASONED ROASTED VEGETABLES

  • 4 Tablespoons Umami Seasoning
  • 4 cups hardy vegetables (such as zucchini, yellow squash, butternut squash, brussels sprouts, mushrooms, carrots, bell peppers, asparagus, onions, potatoes), chopped with each type of vegetable kept separately
  • 1/2 cup vegetable oil

  1. Preheat oven to 375°F.
  2. Mix all ingredients together in a large bowl. Spread out in a single layer across two rimmed baking sheets.
  3. Roast until vegetables are lightly browned and cooked through, anywhere from 20 minutes to 45 minutes, stirring vegetables every 10 minutes.
  4. Remove from oven and serve.

 

Note: Different types of vegetables take different lengths of time to cook. Denser vegetables, such as carrots, brussels spouts, and butternut squash, take longer to cook than more watery vegetables like zucchini and mushrooms. If you have enough room in your oven, you can always keep different vegetable types on separate rimmed baking sheets, cook them separately, and then combine in a bowl or platter to serve.
